Mock Oatmeal
I found this great recipe in a cookbook called Paleo Eats by Kelly Bejelly.

  1. Place all of the ingredients except the coconut milk and cherries in a food processor and pulse until you have a rough crumble.
  2. Set aside 1/2 cup of this starter to use immediately and store the remainder in an airtight container for up to 1 month. This recipe makes enough starter for 3 servings of oatmeal.
  3. In a saucepan, combine the reserved 1/2 cup of the oatmeal starter and the coconut milk and place over medium heat. Stir and bring to a boil, then lower the heat and cook for 2 to 3 minutes, until thick and creamy.
  4. Remove from the heat and top with cherries or your favorite fruit, if desired. Serve immediately.
