With another Holiday Season behind us it’s time to look forward to a New Year to make new memories, perhaps new friendships, or maybe renewing old ones, or perhaps an opportunity to try a new recipe or try something totally out of the box, whatever your “new” is I wish you all the best in the weeks to come.
My “new” is the Autoimmune Solution protocol by Amy Meyers M.D. I started on December 12th, and currently on day 23. In all honesty it hasn’t been easy, it requires a lot of planning plus cooking all meals from scratch. Has it been challenging, yes of course, do I feel better, yes as a matter of fact I do! I will admit that I took a couple of days off to have Christmas Dinner and some goodies, but the next day I was back on track.
I have decided that some of the recipes are going to become part of our repertoire over the next few months as they are that good. For some recipes I would make the recipe as suggested, pull out my portion and then would adjust it for my husband so that we could share a meal together.
Once I am done I plan to start eating Paleo. I purchased a couple of cookbooks and hope to follow that once I am done the Autoimmune Solution protocol which is actually in a few days. I am on week four with only a few days left to go which is hard to believe.
I was going to post daily but I found that some of the recipes took a bit of time to cook and so I decided in the end not to follow through with that
Last night for dinner we had Chicken Coconut Curry which was absolutely delicious and the consensus is that this recipe will become a favorite going forward. Another favorite has been Cauliflower Rice which is quite simple to make and does look like rice after you process it in the food processor. Once you cook it up it is quite delicious.
When I started the Autoimmune Solution protocol it felt overwhelming at first but as you go through the days you learn to budget your time, plus I did switch some of the meals around to make it work for me. All in all the journey was worth it. I also liked that I could buy most of my ingredients at the local grocery store which is a plus for me as I don’t like to buy obscure ingredients that I may not ever use again.
Some of the recipes I get to have this week are:
- Organic citrus kale salad with cranberries or I can create my own mixed salad.
- Loaded sweet potatoes
- Arugula blood orange and fennel salad
- Spicy fish tacos
- Seared grass fed steak with sweet potatoes
- Banana cream mini cake bites
On my next post I will let you know how the last few days went and how my new Paleo diet is coming along.
