Hello and Welcome!
The Christmas Season is fast approaching and I am almost done with decorating, but have some baking left to do. I Managed to brave the shopping mall on the weekend, what a zoo but I knew what I wanted and just had to go to a few stores to find what I was looking for.
I recently read the Autoimmune Solution by Dr. Amy Myers as I currently have two Autoimmune diseases that I am dealing with. I decided to embark on the Autoimmune Protocol before Christmas; I know it seems like a strange time to do this but to me it feels like the right time. It definitely is not for individuals that do not like to cook, as it requires that you make all of your meals from scratch. I also think that I need another fridge to store all the vegetables that I need for the week as our fridge is packed full.
Last week Dr. Amy’s website had a promotion that if you purchased her book, scanned them a copy of your receipts you could receive a a certain amount of free downloads. Well let me tell you the shopping list was one of the downloads and what a time saver. Also, so that I wouldn’t wreck my book I decided to type out all of the recipes and put them in a binder so that I can quickly refer to them. Saves my book and I if I spill something on my paper then I can always reprint a new one.
I will be posting frequent updates to highlight what my meals were for the different days along with pictures, but please note that I will not be posting the recipes.
Menu for December 12
|Sweet apple breakfast sausage|
|Hearty sweet potato hash|
|Spring green veggie juice|
|Chai tea latte or decaf green tea|
|Organic citrus kale salad with cranberries|
|Organic farm five-veggie soup|
|Creamy Basil Pesto Sauce over Spaghetti Squash|
|1/2 cup organic mixed berries such as raspberries, strawberries, blueberries or blackberries|
I enjoyed my first breakfast on the program but would have to admit that the Spring Green Veggie Juice took a little bit of time to drink. Although it’s very refreshing, it will take some time to get used to it.
My lunch was quite tasty as well. The Farm Five-Veggie Soup requires some extra preparation but it definitely worth the wait plus it complimented the Kale Chicken Salad.
The dinner was quite interesting as well but I found that there was just a little bit too much squash to eat. I did enjoy the homemade pesto sauce though as it complimented the ground beef very well.
